tracy's Apple Crisp


























OH HOLY GOODNESS IN A BOWL!
I love apple crisp. Warm apples and brown sugar and toasted nuts and, and, and...I'll stop now. Whether we call this a crisp or a crumble, we all have a favorite version or recipe of this dish. My personal favorite happens to be from Baking Illustrated by America's test Kitchen (of course it is) But this is currently the new favorite in the house.
My cousin - Tracy - sends me this recipe and says "fix it...please" and also says "and I want a caramel sauce...not a simple syrup...are you up to the challenge?" Seriously??? After much laughter I got down to business. 
Several bags of apples later - and several little pots of caramel sauce later - I think we have a winner. I hope you have an opportunity to try this version of a classic dessert.


YOU WILL NEED:


2 granny smith apples - peeled and chopped
4 fuji or red delicious apples - peeled and chopped
juice from 1 lemon
2 tablespoons sugar
1 cup of flour
1/4 cup rolled oats
1 cup packed brown sugar
1 1/2 teaspoons cinnamon
1 stick butter - at room temperature
1 cup almonds and pecans - chopped and toasted


1 cup (and more) caramel sauce


TO DO:


oven to 350


chop and toast the nuts
spread all the nuts out on a baking sheet
toast at 350 about 6 minutes
set aside


in a large bowl put together the flour, oats, brown sugar and cinnamon
mix well with a fork (that's what i used anyway)
add the softened butter
mix well
add the nuts
























now peel and chop all those apples and place all the pieces in another bowl
add the lemon juice and 2 tablespoons sugar
mix well
























(i just like this photo - no real need for it in this posting)
add half the dry mixture to your dish






















cover with all the apples
























cover the apples with the rest of the dry mixture
















































pour caramel sauce over the top - but save some for when your ready to serve so you can add more (we all need MORE caramel sauce!)
























into the oven it goes for around 45 minutes - or until the top is completely toasted and things are bubbling
























let it cool for a few minutes before serving with vanilla ice cream and more caramel sauce
























ENJOY!


By the way...I did use a homemade caramel sauce...that recipe will be up soon

  2. I love how yummy this recipe looks! I'm sure my kids are going to eat too much of this once I made it at home. But I have to limit the sweets they eat otherwise we might have to pay a visit to the West Columbia dental clinic.

  4. A cosmetic dentist in Atlanta once told me that eating sweets would not cause much damage to my teeth as long as I brush them regularly. She also said that since there are now more advanced technology in dentistry, damages teeth could be resolved faster.
